Risotto take 2! I had arborio rice left over from my Roasted Pumpkin and Feta Risotto dish so I decided to make it again but with chicken and mushroom!

Dear Chibi,
I had a hard time deciding what to cook this week! Chibi is on a ‘healthy eating’ diet until end of September, so she wanted to avoid all sweets and desserts. She’s also not comfortable dealing with meat yet (no idea how to buy meat..) so no meat dishes, and prefers something that’s not too difficult or too unhealthy. She end up coming across this fritter recipe. Now it is a little unhealthy since it will be fried but it looked so yummy! heeeee. I told myself I’ll only have a little bit so it should be okay :D I’ve never fried anything before so… I need to practise!

Dear Chibi,
Today I tried my hands on making a risotto dish, based on this recipe! I don’t remember what risotto is supposed to taste like, so it was all very new and exciting to me (much like the potato and leek soup). It turned out really yummy and flavorful :D I used to hate pumpkin so I don’t have it much at all, but times have changed ;D

Potato and Leek Soup

Dear Chibi,
This week I wanted to move away from baking and have a go at making a nice warm soup! Jacky wanted Potato and Leek Soup so I went with that (I’ve never had it before so I’m just gonna assume it tastes good ;D) This time Jacky helped me get the potato, leek and onions while I got the rest of the ingredients. I also borrowed his blender.

Brownies

Dear Chibi,
In this week’s episode, I tried to make Chocolate Brownies following this recipe! The method and ingredients is similar to Rocky Road except it’s baked in the oven like my Muffins! Again, I decided to bake two batches, one on Saturday (for guinea pig testing) and hopefully a better one on Sunday.
Here’s my end result:

Mmm…juicy and gooey ~ Served with Cookies & Cream ice-cream :D

Muffins Galore

Dear Chibi,
This weekend I decided to try baking muffins! It proved to be more challenging than I thought. I made a batch of 12 on Saturday which turned out pretty disappointing. The muffins were burnt on the bottom and all around the edges. The shape was also pretty weird. About half of it end up going to waste. After evaluating what could have possibly gone wrong (there were several factors) I was determined to make a better batch the next day.
This morning I headed back to Woolies to find some muffin paper cups. On Thursday night I had bought the wrongs ones (they were for cupcakes), so I thought I could just do without the paper. Oh how wrong I was~ XD
This is the end result of my Macadamia, white chocolate and raspberry muffins!


mmmmm! I’m really happy with how these came out today :D After the second batch, I had a few more left over for a third batch. The third batch was the best :D
