Potato and Leek Soup

Dear Chibi,

This week I wanted to move away from baking and have a go at making a nice warm soup! Jacky wanted Potato and Leek Soup so I went with that (I’ve never had it before so I’m just gonna assume it tastes good ;D) This time Jacky helped me get the potato, leek and onions while I got the rest of the ingredients. I also borrowed his blender.

It was fun working with these ingredients. I’ve never used leeks before so I watched some youtube videos to learn more about them ;D I didn’t know leeks would make me cry ;_;

After putting everything into the blender, we have the above result! Pretty cool huh? I finished off by mixing thickened cream and adding some fresh chives.

Tada!

I thought it taste quite nice, though we agreed it was a little salty and perhaps a bit thick. I think the reason was because I only used 1L (4 cups) of chicken stock instead of 1.25L (5 cups). I didn’t know it would make such a drastic difference. Better to use to correct portions next time ^_^ In total, it took about 2 hours to make 4 bowls of soup. It went..really quick, haha.

I have left over ingredients so I’m gonna have another go possibly next Saturday.

    Leek soup was quite yummy! A little salty, a little thick, but overall a tasty litle treat. Can’t wait til you make more! :D

      haha, you have a pretty limited choice of food at the moment XP
